Sweet Potato & Miranda Gratin

Serves 4

Ingredients

  • 1 teaspoon unsalted butter
  • 3 large sweet potatoes, peeled
  • 3 cups 35% cream
  • 1 cup grated Miranda cheese, rind off*
  • 1 sprig of thyme
  • salt & pepper to taste

Instructions

  1. Lightly butter sides and bottom of an 8-inch square baking dish. Thinly slice potatoes lengthwise.
  2. Combine cream and thyme. Simmer and let infuse for 10 minutes. Layer a row of potatoes on bottom of pan and add 1/3 of the cream.
  3. Season with salt and pepper. Repeat and add half the cheese. Finish last layer with remaining cream.
  4. Sprinkle finished layer with remaining cheese. Bake at 300 degrees F for 40 minutes.

* Substitute with Oka cheese.
