Sauteed Fava Beans with Roasted Almonds

Serves 4

Ingredients

  • 2 cups fresh fava beans

  • 3 teaspoons butter

  • 1/4 cup dry white wine

  • 3 tablespoons slivered almonds

  • 1 teaspoon fresh savoury, chopped

  • salt & pepper to taste

Instructions

  1. Bring a small pot of water to a boil.
  2. Add fava beans and cook for no longer than 40 seconds. Drain and refresh in cold (icy water). Peel by pinching a side to open skin and push bean out. Discard shells.
  3. Toast almonds on baking sheet in 350 degrees F oven for 2 minutes.
  4. Melt 2 teaspoons of the butter, add fava beans and sauté on medium heat for 2 minutes.
  5. Add wine and cook on medium heat until only 1 teaspoon of wine is left. Add remaining butter, almonds and savoury.
  6. Mix and season with salt and pepper.
