Planked Salmon

It's believed that using a wood plank for grilling was originally a Canadian Aboriginal or Scandinavian cooking method. A great way to add flavour, it’s one of today’s hottest gourmet cooking methods. Buy untreated cedar planks at your local grocery, specialty food or hardware store. You don’t have to limit yourself to cedar. Try untreated oak, maple, cherry or apple wood planks for different flavors.

  • 1 cedar plank
  • 2/3 cup sliced almonds
  • 2 tbsp chopped red onion
  • 2 tbsp capers
  • 2 tbsp fresh thyme
  • 2 tbsp grain mustard
  • 2 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp freshly ground pepper
  • 4 - 8 oz salmon filets

Soak plank in water overnight. Combine almonds, onion, capers, thyme, mustard, lemon juice, salt and pepper in the bowl of a food processor. Blend until it becomes a fine mulch. Press into the flesh of salmon filets. Place coated salmon filets on soaked plank and place on a preheated, medium-hot, natural gas grill. Close cover and grill for about 10 minutes for each inch of salmon's thickness, or until cooked throughout. Open lid to check for flare-ups. If plank catches fire, spray with water.

Makes 4 servings.

Balsamic Vinegar & Thyme Sauce

  • 1/2 cup mayonnaise
  • 2 tbsp balsamic vinegar
  • 1 clove garlic
  • 1 tbsp fresh thyme
  • 1/2 tsp salt
  1. Combine all ingredients in a food processor
  2. Blend until smooth
  3. Spoon finished sauce over grilled salmon fillets

Makes 4 servings.
