Doug Mayhew’s Grilled Stuffed Rainbow Trout


Serves 2 people

Grilled Stuffed Rainbow Trout

  • 1 rainbow trout1 tbsp chopped parsley
  • 1 tbsp chopped lemon thyme
  • olive oil
  • 1/2 lemon
  • 1/2 lime

Stuffing

  • 1/4 stick butter
  • 1/2 cup sliced mushrooms
  • 1/2 cup baby shrimp
  • 2 teaspoons chopped chives
  • 1/2 cup chopped onions
  • 1 teaspoon chopped
  • green pepper

Instructions

  1. Sauté stuffing ingredients until onions are golden.
  2. Add chopped parsley, lemon thyme and a sprinkle of salt and pepper.
  3. Sprinkle stuffing with the juice of 1/2 lemon and 1/2 lime. Stuff the trout with hot mixture. Then truss with toothpicks.
  4. Rub outside with olive oil.
  5. Grill on medium-high heat for about 3 minutes each side or just until flesh becomes opaque.
