Grilled Tomatoes and Green Onions

Grilled Tomatoes and Green Onions Photo

Serves 4 - 6

  • 1/3 cup (3fl oz/80 ml) olive oil
  • 1 tbsp fresh lemon or wine vinegar
  • 2 tbsp chopped fresh basil
  • 1 tbsp chopped shallots
  • 1/2 teaspoon salt
  • 1/4 tsp freshly ground pepper
  • 3 large tomatoes, cut into slices 1/2-3/4 inch thick
  • 10-12 green (spring) onions, trimmed, including 4 inches of green tops sprigs of fresh basil or parsley


  1. Heat your grill to 350-400°F.
  2. In a small bowl stir together the oil, lemon juice or vinegar, chopped basil, shallots, salt and pepper.
  3. Arrange the tomatoes and onions on the rack. Grill, turning them two or three times and brushing with the oil mixture, about 5 minutes.
  4. If the onions are large, they might take 1 or 2 minutes longer.
  5. Transfer the tomatoes and onions to a platter and garnish with basil or parsley sprigs.
