Chef Mackay’s Grilled Shrimp

Makes 4 - 6 servings

When choosing shrimp for grilling, the bigger the better.

  • 1/4 cup frozen concentrated grapefruit juice
  • 1/4 cup olive oil
  • 2 tbsp chopped dates
  • 1 tsp crushed chili peppers
  • 1/4 tsp salt
  • 2 lb shrimps, shells on, deveined


  1. Combine concentrated juice, olive oil, dates, peppers and salt in medium bowl.
  2. Toss shrimp in marinade and let sit in refrigerator for at least 3 hours.
  3. Place shrimp on hot natural gas grill and cook, turning frequently for 5-10 minutes (depending on size), or until shells are bright pink and shrimp are white through to centre.
