Chef Parsons’ Aged Cheddar & Bacon Burger

Chef Parsons’ Aged Cheddar & Bacon Burger Photo

  • 3 pounds ground beef
  • 1/4 cup chopped onions
  • 2 cups chopped raw bacon
  • 2 cups diced aged cheddar
  • 4 tbsp hosin sauce
  • 1 tbsp worcestershire sauce
  • 2 whole eggs
  • 1/2 cup breadcrumbs
  • 2 tbsp finely chopped garlic
  • 1/2 cup finely chopped herbs (tarragon, parsley and chives) to taste salt and pepper

Instructions

  1. Sauté the bacon over medium heat until cooked through (do not throw away the fat).
  2. While the bacon and fat are still warm pour over the ground beef in a large mixing bowl. Add the remaining ingredients and mix well.
  3. Form into eight even size burgers. Wrap in cling film and chill for a least one hour.
  4. To make the glaze combine the barbecue sauce, hosin sauce, honey and ground cinnamon.
  5. Grill the burgers on the barbeque and brush with the glaze every time you turn the burgers.
  6. Once cooked through, serve with a final brushing of the glaze.

Glaze

  • 1/2 cup barbecue sauce
  • 2 tbsp honey
  • 1/2 cup hosin sauce
  • 1 tsp ground cinnamon
