Ontario Harvest Beef Strip Loin


Quatrefoil chef Fraser MacFarlane's beef strip loin with sweet corn, summer squash, roasted peppers and salsa verde.

Serves 4

  • 4 cloves of garlic, finely chopped
  • 8 sprigs of thyme, leaves only
  • 1 cup of olive oil (250 mL)
  • 4 x 10 oz beef strip loin steaks from a reputable butcher's shop
  • 4 ears sweet corn
  • 2 red bell peppers
  • 2 green zucchini, diced
  • 2 yellow summer squash, diced
  • 1 red onion, finely diced
  • Salt and pepper to taste
  • 10 sprigs of parsley, finely chopped

Instructions

  1. In a medium bowl, combine garlic, thyme and four tablespoons of olive oil with a pinch of pepper. Rub onto both sides of each steak. Cover and refrigerate for two-to-48 hours.
  2. Preheat your natural gas barbecue to high. Husk corn and cook the cobs in boiling salted water for five minutes; cool in ice water. Remove the kernels from the cobs. Place the bell peppers on the barbecue until they're well charred on all sides.
  3. Place them in a bowl and cover the bowl with plastic wrap to steam them. Once cool enough to handle, peel the charred skin away from the pepper flesh and discard the peels and seeds. Then dice the peppers.
  4. Remove the steaks from the refrigerator one hour before cooking. Barbecue them on high as long as you prefer. Then, remove the steaks from the heat; cover them lightly with foil and let them rest for at least five minutes.
  5. Meanwhile, heat a pan on the barbecue until it just begins to smoke. Add a couple of tablespoons of olive oil. Add the zucchini and summer squash and allow them to brown lightly. Add the garlic and then the corn and cook it all for two or three minutes, tossing occasionally. Add the peppers, heat them through and season with salt and pepper. Finish with the parsley.
